CULINARY ARTS AND CHEF TRAINING

Chef Training and Culinary Arts:
The Culinary Arts and Chef Training programs are designed to prepare students for employment in various commercial food service establishments such as restaurants, cafeterias, country clubs, and catering services.

Culinary Arts students learn skills that are required to prepare commercial foods in quantity (soups, sauces, salads, meats, seafood, vegetables, etc.); Chef Training also incorporates all phases of baking including:

• Pies,
• Yeast breads
• Quick breads
• Cakes,
• Cookies
• Decorating

Culinary Arts and Chef Training students must complete the core competencies and may select a specialty area and exit at an occupational completion point. This program is accredited by the Accrediting Commission of the American Culinary Federation Foundation (ACF).

Completion Time:
The Culinary Arts program is competency-based. Completion time depends on the progress of each individual. The typical length of the complete program for the average achieving student is 1500 hours (approx.13 months).

Comm. Foods & Culinary Arts 1: 750 Hours
Comm. Foods & Culinary Arts 2: 750 Hours

Industry Certification & State Credential Exams:

SafeStaff; ServSafe (as required by the FL Dept. of Health) may be earned during the program. Completing students will be eligible to take the following: Certified Culinarian (after 1 year documented work experience in field), and State of Florida Ready to Work.

 

College Credit Transfer Opportunity and / or Advanced Credit

Upon completion of the program and meeting eligibility requirements, students may be awarded up to 27 college credits by Broward College toward an A.S. or A.A.S. Degree in Industrial Management Technology or, 24 credits toward the A.A.S. or A.S. Degree in Culinary Management by other selected Florida Community Colleges.

American Culinary Federation related classes of 30 hours are offered in each of the following subjects:
